Tomos Parry and the team at Brat are preparing to open our new Soho restaurant. A historic building on a classic soho street due to open mid summer 2023. An atmospheric wood grill and wine bar, inspired by the ‘sea and hillside’ of Catalan cooking and the Welsh terrior, summers spent eating seafood from the plancha in local fisherman's bars and long lunches in vineyards with our favourite winemakers.
Our Soho restaurant will be the accumulation of the last few years working on projects such as direct sourcing of Welsh shellfish, building closer relationships with wine makers and our continued focus on beautiful produce which is in the ground in the morning and on the wood grills in the evening.
We are looking for a Pastry Chef to work alongside our Senior Pastry Chef and kitchen team as we build the team to develop the pastry and bakery project.
At Brat we use organic stone milled heritage grains from Felin Ganol, one of only two working water mills in Wales. Our pastry and baking kitchen has been designed around the wood fired ovens, where we will be baking breads and creating seasonal puddings.
The open kitchen at the heart of the restaurant, is a place where everyone feels they contribute with menu ideas and learning & curiosity are celebrated. With this culture we work towards the development and progression of our teams.
We are looking for chefs who have a strong interest in seasonal sourcing and driven to learn about dish development that respond to the fruit available from the small farms.
