In collaboration with Executive Chef Nobuyuki Ura, ÒRA Restaurant offers guests Japanese dining & Kaiseki Omakase cuisine with an exemplary beverage selection.We aim to continually curate a superb team of superstars who share our vision, passion and respect for Japanese food, it’s heritage and culture and memorable dining experiences.Job DescriptionReporting directly to our Head Chef you will have a proven track record of managing a busy kitchen in a high volume casual fine dining environment. You will have experience with a variety of cuisine and a background in Japanese techniques and styles. You will be creative and have a genuine passion for exceptional cuisine. You will also be able to manage and develop a strong team. This role is your opportunity to make your mark within the Sydney dining space and be part of a new venue.Creation and planning of menus with the Executive Chef.Estimating food and labour costs, stock taking and managing kitchen ordering.Monitoring quality of dishes at all stages of preparation and presentation.Preparing and cooking food to a high standard.Explaining and enforcing hygiene regulations.Developing and training a dynamic and talented team.QualificationsAt least 3 years experience at a high volume restaurant in a similar role.Relevant qualification certificate 4 or equivalent.Good knowledge of health, safety & sanitization procedures.Knowledge in modern and traditional Japanese cuisine.Must be trade qualified and hold a Certificate III/IV in Commercial Cookery.A key success in this role, is a genuine passion for producing great food coupled with excellent organizational skills, a reliable honest attitude and the ability to work calmly and effectively under pressure in a fast paced environment.The right candidate must have excellent communication skills and a strong customer service focus, as well as be professionally presented and groomed at all times.A committed, trustworthy and responsible person is what we are looking for, as well as someone who can be flexible and available to work nights, weekends, public holidays.The ability to work in an open, fast-paced kitchen and interact with dining guests.Solid understanding of produce, culinary techniques and equipment.Ability to work in a fast paced dynamic environment.Additional InformationCasual Position.Amazing career progression.A management team with a modern approach to coaching.An energised and professional company culture.A chance to be involved with a fun, diverse and exciting experience.Ora Restaurant
